Ingredients: 2 tablespoons butter,2 eggs,1/2 teaspoon ground cinnamon,cup (80 ml) milk,3 teaspoons grated orange rind,2 oranges- sliced,250 grams self raising flour,150 grams sugar,300 milliliters water
Instructions:
- For the glaze
- Combine water and sugar in a large pan over a low heat, without boiling until the sugar dissolves. When the syrup thickens slightly add the oranges in batches gently.
- Let it simmer gently for about 10min uncovered until the rind is tender. Carefully remove the slices and reserve the syrup.
- Place the slices over base of prepared pan.
- Add some extra water to the syrup if you find it too little, and simmer till it turns light honey color.
- Pour enough syrup over the slices in pan.For the cake.Preheat the oven to 180 deg. cel. Grease a 8in pan.Sieve the flour and baking powder.
- Combine all ingredient in a mixer and beat with an electric mixer on low speed until combined. Continue mixing until the mixture is smooth and light in color.
- Pour mixture in pan and bake for 45 min and test with a skewer when it comes out clean.Cool the cake and gently revert cake on a wire rack. Prick the cake with a tooth pick all over and pour any left over syrup over the cake.
