Caesar Dressing

Ingredients: 2 Tbsp lemon juice,2 Tbsp olive oil,1 tsp Dijon mustard,1-1/2 tsp Worcestershire sauce,3/4 c mayonnaise,2 cloves garlic, minced,1 tsp anchovy paste (or 2 fillets, mashed),1/2 c Parmigiano-Reggiano, finely grated,Freshly ground pepper to taste
Instructions:

  1. In a bowl, whisk together lemon, olive oil, Dijon mustard, and Worcestershire sauce. 
  2. Add mayonnaise and whisk again until smooth and creamy.
  3. If you’re using anchovy fillets, mash them well with a fork until they’re nearly reached a paste consistency. You want it to mix well throughout all of the dressing. If you’re using anchovy paste, skip this step.
  4. Add remaining ingredients and mix everything together well with a spoon.
  5. Add freshly ground pepper to taste.
  6. Serve and enjoy!
