Ingredients: 3/4 tbsp almond extract,2 cups almond meal ((ready-to-use ground-up almonds)),1 tbsp amaretto liqueur,5 Xocai Healthy Chocolate Nuggets, grated,3 whole egg whites,1/2 cup sugar
Instructions:
- Mix first three ingredients in a bowl. Beat egg whites until not quite stiff in a separate bowl.
- Add almond extract and amaretto to the egg whites; gradually add dry ingredients.
- Mix well. With two teaspoons, form walnut sized potions and place on parchment-lined cookie sheet.
- Let dry at room temperature at least 6 hours or overnight.
- Bake at 350 degrees for about 12 minutes. Makes 24 cookies
