Apple and Potato Fritatta

Ingredients: 2 medium carrots peeled and grated,2 stalks celery,8 eggs,1/2 cup extra sharp cheddar cheese,1 fuji apple,3 tablespoons olive oil,1/4 cup onion, diced,3 small potatoes
Instructions:

  1. Add in the carrots, celery, and salt. While the last batch of potatoes are baking thinly slice apples and onions.
  2. Add to pan with a tablespoon of olive oil after removing potatoes and cook until softened stirring occasionally. Once soft remove everything from pan add a tablespoon of oil and the egg mixture.
  3. Layer apples, onions, and potatoes into pan and cook 10 minutes or until edges are coming away from the pan. Once the bottom of
