Instructions:
- Add in the carrots, celery, and salt. While the last batch of potatoes are baking thinly slice apples and onions.
- Add to pan with a tablespoon of olive oil after removing potatoes and cook until softened stirring occasionally. Once soft remove everything from pan add a tablespoon of oil and the egg mixture.
