Ingredients:
- 3-6 sweet potatoes
- 2-4 tbsp. butter to taste
- 2-4 tbsp. pure maple syrup to taste (optional)
- 1/4 cup pecans toasted, if desired, and chopped (optional)
Instructions:
- Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil. Place the potatoes on the baking sheet and bake them for 45 – 50 minutes until they are very tender. (Alternatively, you can microwave the potatoes for 10-15 minutes until they are soft, turning them every five minutes.) Split the potatoes lengthwise and mash in desired toppings (we like a little butter or margarine, maple syrup and chopped pecans).
