Ingredients: 2 teaspoons baking powder,2 1/2 cups Fresh blueberries, divided,1 large egg,1 1/2 cups all-purpose flour,cup milk,1/2 teaspoon salt,1 tablespoon Sugar,1/4 cup vegetable oil
Instructions:
- Combine first 4 ingredients in a large bowl; make a well in center of mixture. Stir together milk, oil, and egg; add to dry ingredients, stirring just until moistened. Fold in blueberries.Spoon into greased muffin pans, filling two-thirds full.
- Sprinkle batter evenly with 2 tablespoons sugar.
- Bake at 400 degrees for 20 to 25 minutes or until muffins are golden.
- Remove from pans immediately, and cool on wire racks.This recipe yields 6 muffins.
