Ingredients: 1 teaspoon baking soda,1 cup butter,1 cup dried cranberries,2 eggs,2 cups flour,2 cups granulated sugar,1 teaspoon ground cinnamon,1 tablespoon honey,2 1/2 cups oats,3 tablespoons salt,1 cup packed brown sugar Splenda,1 cup packed brown sugar Splenda,1/2 teaspoon vanilla extract,1 cup chopped walnuts
Instructions:
- Preheat the oven to 350 F.In a medium bowl, mix the flour, baking soda, salt and cinnamon; stir in the oats, and set aside.With an electric mixer, beat the butter and both sugars until light and fluffy. Beat in the eggs, one at a time, then scrape the sides of the bowl.
- Add the honey and vanilla and beat until blended.
- Add the flour mixture in two additions, beating until well combined.Stir in the cranberries and walnuts.Drop the dough by heaped teaspoons about 1 inch apart onto cookie sheets.
- Bake for 9-11 minutes or until the centers of the cookies are soft and no longer look wet.
- Let cool on the sheets for 5 minutes, then transfer to a rack to cool completely.
