Great Gazpacho

Ingredients: 1 medium Cucumber, diced,1 teaspoon Dried tarragon,1 teaspoon Minced fresh basil,1 Garlic clove, crushed,1 Green bell pepper, minced,1 pch Ground cumin,1 dsh Hot sauce,2 tablespoons Lemon juice,1 tablespoon olive oil,1 small onion minced,2 tablespoons Red wine vinegar,Salt and pepper, to taste,3 cups Vegetable or tomato juice,2 mediums Tomatoes, diced
Instructions:

  1. Combine all ingredients and chill for 2 hours.HINT: Out of time? Forget al the mincing and chopping. Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.Preparation Time: 15-40 minutes
  2. Chilling Time: 2 hours
