Lemon Dijon Vinaigrette

Ingredients: 1/2 teaspoon Dijon mustard,1/2 teaspoon freshly squeezed lemon juice,Lemon zest,cup olive oil plus more for brushing,Freshly ground pepper,1/2 teaspoon Salt,1/2 teaspoon finely minced scallion,1/2 teaspoon wine vinegar
Instructions:

  1. Stir the scallions together with the mustard and salt.
  2. Whisk in the lemon juice and vinegar
  3. When well blended start whisking in the oil by droplets to form a smooth emulsion
  4. Add the ground pepper and taste for seasoning
  5. Grate fresh lemon zest on top of dressed salad
  6. Alternately, shake all the ingredients in a jar, or blend with an immersion blender, until emulsified.
