Ingredients: 1 tablespoon baking powder,100 grams brown sugar (4 oz),100 grams brown sugar (4 oz),1 cup chocolate chips,1 egg, beaten,50 gr all-purpose flour, sifted,1 tablespoon golden syrup/karo syrup,1 cup cold STRONG brewed coffee,50 gr unsalted butter, melted,1 cup yogurt
Instructions:
- Preheat oven to 375F/190C. Melt together the butter, brown sugar and syrup in a small pot. Sugar doesn't need to dissolve.
- Mix until well combined. Leave to cool. In a large bowl, beat together coffee, yogurt and egg.
- Add cooled melted mixture and mix well. Sift together flour and baking powder in another bowl.
- Add choc chips and mix through.
- Add to liquids and fold in VERY GENTLY until flour is just wet. Fill 12 greased muffin cups with mixture and
