Mocha Muffins

Ingredients: 1 tablespoon baking powder,100 grams brown sugar (4 oz),100 grams brown sugar (4 oz),1 cup chocolate chips,1 egg, beaten,50 gr all-purpose flour, sifted,1 tablespoon golden syrup/karo syrup,1 cup cold STRONG brewed coffee,50 gr unsalted butter, melted,1 cup yogurt
Instructions:

  1. Preheat oven to 375F/190C. Melt together the butter, brown sugar and syrup in a small pot. Sugar doesn't need to dissolve.
  2. Mix until well combined. Leave to cool. In a large bowl, beat together coffee, yogurt and egg.
  3. Add cooled melted mixture and mix well. Sift together flour and baking powder in another bowl.
  4. Add choc chips and mix through.
  5. Add to liquids and fold in VERY GENTLY until flour is just wet. Fill 12 greased muffin cups with mixture and
