Ingredients: 1 tsp baking soda,2 large eggs,2¼ cup all-purpose flour,¾ cup granulated sugar,¾ cup light brown sugar,¾ cup light brown sugar,2 cups old-fashioned oats,¼ cup 0% plain greek yogurt,½ tsp salt,1½ cup semi-sweet chocolate chips,½ cup unsalted butter, softened,2 tsp vanilla extract
Instructions:
- Preheat oven to 375 F. Line two cookie sheets with silpat or parchment paper.In a mixer add butter and blend until creamy.
- Add in the sugars and blend on medium-low until combined. Scape down sides if needed.Pause the mixer and add the vanilla extract and eggs to the mixer. Turn the mixer to medium speed and increase to medium-high and blend until lightly fluffy, about 1 minute. Turn the mixer to low and add in the yogurt. Pause mixer.In a medium sized bowl, combine flour, baking soda, and salt.With the mixer on low, gradually add in the flour. Increase to medium and blend until combined, scraping down sides as needed.Return the mixer to low and gradually add in the oatmeal to the mixer. Blend on medium speed until throughly combined.Reserve cup of the chocolate chips and stir in the rest into the dough.Using a tablespoon scoop, evenly place dough on baking sheet. Gently press in a few chips to the top of each ball of dough.
- Bake for 9-10 minutes or until golden.
