Ingredients: 1 teaspoon baking soda,1 cup buttermilk, at room temperature,1 teaspoon cocoa powder,2 large eggs, at room temperature,2 1/2 cups flour,2 tablespoons red food coloring,1 teaspoon salt,1 1/2 cups sugar,1 teaspoon vanilla extract,1 1/2 cups vegetable oil,1 1/2 teaspoons distilled white vinegar
Instructions:
- Add eggs, oil, buttermilk, vinegar, vanilla extract, and red food coloring; beat at medium speed with electric mixer until combined.
- Spread batter onto cookie sheet.
- Bake 20 minutes, or until a tester inserted near center comes out clean.
- Let cool in pan 10 minutes. Using a 2-1/2-inch round cookie cutter, cut as many as you can from the baked cake. Use the bits and pieces for the cake crumb edging.Use the icing of your choice. Mine is just a stabilized whipped cream.
