Strawberry Cheesecake Chocolate Crepes

Ingredients: 8 oz cream cheese,1 1/4 cup diced strawberries,1 tsp vanilla extract,1 tsp lemon juice,2 tbsp granulated sugar,1 1/2 cups all-purpose flour,1/4 cup cocoa powder unsweetened,1/8 tsp kosher salt,3 eggs,1 1/4 cups milk,1/4 cup water,4 tbsp unsalted butter melted,1/2 tsp vanilla extract
Instructions:

  2. Add cream cheese, strawberries, vanilla extract, lemon juice, and granulated sugar into a medium-sized mixing bowl.
  3. Use a hand mixer, wooden spoon, or spatula to mix ingredients.
  4. Mix until smooth.
  5. Set aside.
  6. How to Blend Chocolate Crepes Ingredients
  7. Combine flour, sugar, cocoa powder, salt, and eggs to a food processor or blender.
  8. If using a food processor, keep it running as you add milk and water. Continue to pulse intil blended well.
  9. Pour in melted butter and vanilla extract.
  10. Set bowl aside.
  11. How to Make Chocolate Crepes
  12. Heat crepe pan or 8″-10″ omelet pan over medium heat.
  13. Pour 1/4 cup of batter directly into the middle of the pan and swirl to cover the bottom.
  14. Cook the crepe for 2-3 minutes or until the bottom is light brown and the edges are completely set.
  15. Flip the crepe over and cook for an additional minute.
  16. Transfer to a serving platter and repeat for the rest of the batter.
