  • 2 sticks (1 cup) vegan butter or margarine (we like Earth Balance)
  • 1/2 cup sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup almond flour
  • 1/2 cup white rice flour
  • 1/2 cup potato starch
  • 1/4 teaspoon kosher salt
  • 1 cup fruit preserves
  • Sliced almonds, for topping
