Ingredients: 1 cup rice (I used white rice. You can use round brown rice, it’s healthier),3 cups water,1 big onion, diced,1 medium carrot, grated,1 big red bell pepper, diced,1 tsp sweet paprika (optional – it gives a lovely reddish color),sea salt, to taste,¼ tsp ground pepper,3 tbsp unrefined oil (I used sunflower oil, you can use any type of oil you like as long as it doesn’t have a very strong flavor; unrefined cold-pressed oils are healthier)
