Ingredients: 3/4 cup lentils,2 1/2 cups vegetable stock,1 cup water,1/4 cup dry red wine,1 pound tomatoes, skinned and seeded,1 carrot, sliced,1 celery stalk, sliced,1 garlic clove, minced,1 onion, chopped,2 teaspoons tsp fresh chopped basil or ½ dried,1 bay leaf,6 tablespoons grated Parmesan
Instructions:
- Combine all ingredients in a large pot. Bring to a boil then reduce the heat to low and allow to simmer for 20-25 minutes. Stir occasionally. Fish out the bay leaf, add in cheese and serve.
