Ingredients: 1 tablespoon apple cider vinegar,1 cup fine-grind bulgur,1 can black beans,1 can (8 oz) pineapple,1 teaspoon lime juice,1 cup red bell pepper, chopped,2 scallions, chopped
Instructions:
- Add 1 cup cold water to the bulgur; let sit for 30 minutes or until water is fully absorbed.
- Drain the beans and pineapple and mix with pepper, scallions, vinegar, lime juice and bulgur.
