Braised Carrots

Ingredients: 1/2 cup apple, juice,3 carrot, chopped, (rolling cut is nice),1 fresh sprig rosemary, chopped or 1/2 tsp dried rosemary<,1 fresh sprig rosemary, chopped or 1/2 tsp dried rosemary<,2 clv garlic, bruised,1 zest of 1 lemon,2 tablespoons olive oil,1 onion, chopped
Instructions:

  1. Heat the oil in a frypan over high heat.
  2. Add the garlic and onion and cook for 2 minutes.
  3. Add the carrots, rosemary and lemon zest and cook for 2 minutes more.
  4. Add the apple juice and cook for 3 more minutes, until almost all of the liquid has evaporated.
