Dried Cranberry Chocolate Cookies

Ingredients: 1 teaspoon baking power,1 teaspoon baking power,1/2 teaspoon baking soda,1 ½ cup dried cranberries,1 large egg,1 large egg yolk,½ cup granulated sugar,1 teaspoon kosher salt,1 cup light brown sugar,1 cup light brown sugar,1 cup old fashioned rolled oats,500g Plain flour, sifted,¾ cup semisweet chocolate chips,6 tablespoons unsalted butter, cut into pieces,1 tablespoon vanilla extract,¾ cup white chocolate chips
Instructions:

  1. Preheat oven to 32
  2. Line 2 baking sheets with parchment paper. In a medium bowl mix the flour, baking powder, baking soda and the salt. In a standing mixer fitted with the paddle beat the butter and both sugars medium speed until creamy.
  3. Add the egg followed by the egg yolk and vanilla, beating well between additions and scraping down the side of the bowl. Beat in the dry ingredients.
  4. Add the chocolate chips and the dried cranberries and beat until well incorporated.Spoon heaping teaspoons of the dough onto the baking sheets, 2 inches apart.
  5. Bake for 12 to 15 minutes, until the cookies begin to brown at the edges.
  6. Let the cookies cool on the baking sheets, and then transfer them to a rack to cool completely.
