Ingredients: 1/2 cup agave syrup,2 tablespoons baking powder,3 bananas, mashed,2 tablespoons canola oil,2 eggs,7.5 teaspoons light brown sugar,7.5 teaspoons light brown sugar,2 oranges,1/4 cup chopped pistachios,2 cups quick cooking oats,1/2 teaspoon salt,1 cup whole wheat flour
Instructions:
- Preheat oven to 180C. Line muffin tin.
- Combine mashed banana, orange peel from 2 oranges, 1/2 cup freshly squeezed orange juice from the oranges, eggs, oil and agave in a bowl an mix well. In another bowl, mix oats with flour, salt and baking powder.
- Pour dry mixture into wet mixture and stir until just combined. Fill batter into muffin tin.Put half a teaspoon of the brown sugar on each muffin and sprinkle chopped pistachios on top.
- Bake for about 20 minutes or until a toothpick comes out clean.
