Pasta A La Lydia (Halloween Inspired)

Ingredients: Salt and fresh ground pepper,250 grams zebra linguine,1/4 cup Parmesan cheese, grated,1/2 head radicchio, cored and thinly sliced,2 large sweet potatoes, peeled and cut into ½ inch cubes (about 2 cups),2 tablespoons unsalted butter or lard
Instructions:

  1. Melt butter in a large heavy skillet over medium-high heat, then continue to cook until it is golden brown (about 2 min).
  2. Add sweet potatoes and cook over medium heat, stirring occasionally, until golden and tender, 6 to 8 min. Reduce heat to low, add radicchio and season with salt and pepper to taste. Cook, stirring, until radicchio is wilted and just tender (about 3 min).Meanwhile, cook pasta in a pot of boiling salted water until al dente.
  3. Drain pasta and top with sweet potato mixture, or add the pasta to the mixture and stir to combine.
  4. Serve topped with the grated Parmesan.
