Spiced Pumpkin Pancakes

Ingredients: 2 teaspoons baking powder,2 teaspoons baking soda,1/2 cup brown sugar,1/2 cup brown sugar,2 teaspoons cinnamon,1 egg,1/8 teaspoon ground allspice,1/4 teaspoon ground ginger,1/4 teaspoon ground nutmeg,1 cup pumpkin puree,1 tablespoon vegetable oil,2 tablespoons vinegar,2 cups white whole wheat flour,1/2 cup whole milk
Instructions:

  1. Combine all the dry ingredients in a large bowl (flour, sugar, baking powder, baking soda, and the spices).
  2. Mix well.
  3. Combine all the wet ingredients in a bowl and whisk together until the egg and the oil are well mixed.
  4. Add the wet ingredients to the dry ingredients and whisk together until just combined.Preheat a non-stick griddle, and coat it with non stick spray.
  5. Pour the batter into the griddle, using a very scant 1/4 cup of batter for each pancake. Cook the pancakes 2-3 minutes on each side, or until they are nicely browned and fully cooked inside.
