Tropical Carrot Cake

Ingredients: 1 teaspoon baking soda,1 small can crushed pineapple, undrained,3 cups carrots, shredded,1 teaspoon cinnamon,1/2 cup coconut flakes,1 cup egg beaters,2 cups flour,1/2 teaspoon salt,2 cups sugar,1 cup unsweetened applesauce,1 teaspoon vanilla paste(or extract)
Instructions:

  1. Preheat oven to 350 degrees.In the bowl of an electric mixer, mix together the flour, sugar, baking soda, cinnamon and salt.
  2. Add the egg beaters and applesauce and vanilla.
  3. Mix well.
  4. Add carrots, pineapple and coconut.
  5. Mix well
  6. Pour into 9X13 pan(or 2 9″ cake pans) and bake for 45 minutes or until toothpick comes out of center clean.Cool completely.
