Zomppa’s Blueberry Muffins


Ingredients: 1 1/2 cups – ½ of all purpose flour,1 1/2 teaspoons baking powder,1/2 teaspoon baking soda,1 1/2 cups of blueberries,1 cup buttermilk,2 tablespoons canola oil,2 eggs, beaten,1 teaspoon of lemon zest,1 teaspoon salt,3/4 cup sugar,1 teaspoon vanilla,1 1/2 cups whole wheat pastry flour

  1. Pre-heat oven to 400 degrees.Sift the pastry flour, all-purpose flour, lemon zest, baking powder, baking soda, sugar and salt.In a large bowl, beat 2 eggs.Stir in buttermilk, vanilla and oil.
  2. Add the flour mixture and mix until just combined.
  3. Add 1 cup of blueberries, gently.Using an ice cream scoop, fill 18 muffin tins.
  4. Add additional cup of muffins to the top of the muffins.
  5. Bake for 25-30 minutes.Cool for 5 minutes.
  6. Serve and enjoy!
