Sweet Potato Bars

Ingredients: 1 teaspoon baking powder,1 large egg, lightly beaten,1 cup fat free milk,1/2 cup granola cereal,1/2 teaspoon ground cinnamon,1/4 cup maple syrup,2 cups old-fashioned oats,1 orange,1/4 teaspoon salt,1 large sweet potato, cooked and mashed,1 teaspoon vanilla extract,1/4 cup walnuts, chopped,1 tablespoon wheat germ
Instructions:

  1. In a medium bowl, combine oats, granola cereal, baking powder, wheat germ, cinnamon and salt. Set aside.In another bowl, whisk syrup, milk, egg, vanilla extract, juice of 1/2 the orange, zest of the entire orange, and sweet potatoes.
  2. Pour wet ingredients into dry ingredients and mix well.Spray an 8 x 8-inch baking dish with cooking spray and slide in sweet potato mixture.
  3. Bake in a preheated oven at 375 degrees for 15 minutes. Toss walnuts on top and bake another 5-8 minutes. Allow to cool at least 10-15 minutes before cutting.
