Cheddar, Spinach, and Pepper Omelet Bagel Sandwich

Ingredients: 1 medium red bell pepper, chopped,1/2 large sweet onion, chopped,1/2 cup cheddar cheese,2 large egg whites,2 large eggs,1 tablespoon nonfat milk,salt and pepper to taste,2 bagels, sliced in halves,1 1/2 cups bagged baby spinach leaves
Instructions:

  1. Whisk eggs, egg whites, nonfat milk, salt and pepper in a large bowl, set aside.
  2. Add bell pepper and onion to large nonstick skillet pan with a little olive oil, and saute on high heat for a few minutes until softened.
  3. Turn down heat to medium; add egg mixture, tilting pan so the entire bottom is evenly covered.
  4. Cook for a few minutes.
  5. Pop entire pan under broiler. Broil 2 minutes, or until lightly browned.
  6. Arrange four bagel halves on a nonstick pan, cover with cheese. Broil until cheese is melted.
  7. Cut omelet in half, put on two different bagel halves.
  8. Top with a large handful of baby spinach and remaining halves.
