Ingredients:
- 2 cups white rice flour
- 1 cup tapioca flour (also called tapioca starch)
- 1/2 cup buckwheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon xanthan gum
- 2 teaspoons ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pumpkin pie spice (or mixture of nutmeg, allspice, cloves)
- 1/2 teaspoon table salt
- 1/2 cup (1 stick) unsalted butter, softened
- 2/3 cup dark brown sugar, packed
- 1 large egg, lightly beaten
- 1/2 cup blackstrap molasses
- 1 1/2 teaspoons gluten-free vanilla extract

- 1/3 cup pasteurized egg whites (from a carton is fine)
- 1 tablespoon freshly-squeezed orange juice
- 1/4 teaspoon gluten-free vanilla extract
- 3 cups confectioners' sugar, plus more if needed
