Gluten-Free Gingerbread Men

Ingredients:

  • 2 cups white rice flour
  • 1 cup tapioca flour (also called tapioca starch)
  • 1/2 cup buckwheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon xanthan gum
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice (or mixture of nutmeg, allspice, cloves)
  • 1/2 teaspoon table salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2/3 cup dark brown sugar, packed
  • 1 large egg, lightly beaten
  • 1/2 cup blackstrap molasses
  • 1 1/2 teaspoons gluten-free vanilla extract
  • Easy Royal Icing, recipe follows
  • Candies, nuts and sprinkles, for decorating
  • 1/3 cup pasteurized egg whites (from a carton is fine)
  • 1 tablespoon freshly-squeezed orange juice
  • 1/4 teaspoon gluten-free vanilla extract
  • 3 cups confectioners' sugar, plus more if needed
  • Food coloring
