Indian-Style Dill and Turmeric Potato Salad

Ingredients: Large pinch of dried chilli flakes,1 cup fresh dill, chopped finely,2 cloves of garlic, chopped finely,Olive oil,4 large potatoes, parboiled and chopped into cubes,Salt to taste,1/2 teaspoon turmeric powder
Instructions:

  1. Heat the olive oil in a large frying pan.
  2. Add the garlic and chilli and heat gently until fragrant. Then add the turmeric powder. Fry together for about 30 seconds.
  3. Add the potatoes and mix gently to coat with the turmeric.
  4. Add a about 1/4 cup of water and let the potatoes cook through. Then add some salt to taste.Take off the heat and add the dill.
  5. Serve immediately.
