Pineapple Coconut Muffins

Ingredients: 1 tablespoon Baking powder,1/2 tablespoon Brown sugar,1/2 tablespoon Brown sugar,1 tablespoon Unsweetened desiccated coconut flakes,1 tablespoon Unsweetened desiccated coconut flakes,50 grams Corn oil,90 grams Egg,220 grams All-purpose flour,120 ml Milk,500 grams Canned pineapples, diced,1/2 teaspoon Salt,100 grams Sugar,1 teaspoon Vanilla extract
Instructions:

  1. Preheat oven to 200C/400F. Sift flour then add baking powder, salt, sugar, and coconut and mix through.Beat eggs and vanilla extract well then add oil, milk and pineapple and stir well.
  2. Add dry mixture to wet ingredients and combine quickly. Take care not to over-mix.Divide the batter into 12 greased or lined muffin cups, about full.
  3. Sprinkle the top of the muffins with coconut flakes and brown sugar.
  4. Bake for about 25 minutes.
