Super Healthy, But Doesn’t Taste It Vegan Banana Bread

Vegan banana bread is super easy to make. In fact you probably don’t need the added flax seeds or vital wheat gluten because bananas are actually quite binding. That said, both ingredients are not only an added binder but the flax has a nice nuttiness to the bread, while the gluten adds an added “bread-y bite” that I really like. If you don’t have either though, feel free to omit. The bread should still come out fine. Also, if you don’t have white whole wheat flour, feel free to use regular all purpose or even all whole wheat flour. The bread might have a slightly different texture but it’ll still be delicious.
Ingredients:

  • 4 tbsp vegan trans-free margarine
  • 1/4 cup coconut oil (room temperature)
  • 1 1/3 cup dark brown sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/4 cup soy yogurt
  • 1 tbsp ground flax seed (flax meal)
  • 3/4 cup whole wheat flour
  • 3/4 cup white whole wheat flour
  • 1 tbsp vital wheat gluten
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp all spice
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • 1/4 tsp five spice
  • 4 medium RIPE bananas

Instructions:

  1. Preheat oven to 350 degrees. Spray a 9 x 5 x 3 ½ loaf pan with canola oil spray. Stir the ground flax seed into the soy yogurt. Set aside. Whip the medium bananas in a mixer until pureed. Set aside.
