Banana Zucchini Muffins

Ingredients: 1 teaspoon baking powder,1/2 teaspoon baking soda,2 ripe bananas, mashed,cup shortening,2 eggs,1 3/4 cups all-purpose flour,1/2 teaspoon salt,1/2 cup sugar,1/2 cup chopped walnuts (optional),1 cup grated zucchini
Instructions:

  1. Preheat oven at 350 degrees.Cream together shortening and sugar.
  2. Add eggs and beat well.Sift together dray ingredients
  3. Add to creamed mixture alternating with bananas and zucchini stirring well after each addition.Stir in nuts.
  4. Pour in to well greased 9″x5″x3″ loaf pan or muffin pan.
  5. Bake for 45-50 minutes for loaf or 30-35 minutes for muffins.
  6. Let cool on wire rack.
