Chunky Tomato Gazpacho

Ingredients: Sliced avocado,1 cup bread crumbs,4 stalks of diced celery,1 cucumber,2 cloves minced garlic,1 green pepper, chopped,1 tablespoon olive oil,your favorite olives, chopped,1/2 onion,salt and pepper to taste,3 tablespoons (30 -45ml) sherry wine vinegar,1 cup (240 ml) tomato sauce,8 ripe tomatoes (peeled, seeded and coarsely chopped)
Instructions:

  1. Put the tomatoes, green pepper and onion in a blender and puree. (BTW, you can easily peel tomatoes by submerging them in boiling water for a minute or two after which the skins should come off easily.)
  2. Add the rest of the ingredients to the tomato mixture and garnish with your favorite chopped olives.
