  • 2 16-ounce loaves day-old Italian or French bread, cubed
  • olive oil
  • 1 sweet onion, chopped
  • 1 red bell pepper, chopped
  • 1 pound mushrooms, sliced or chopped
  • 1 large head broccoli, chopped
  • 1 pound (16 ounces) sharp cheddar cheese, grated
  • 2 pounds bulk breakfast sausage
  • cayenne pepper
