Snickerdoodles (vegan)

Ingredients:

  • 1 cup all purpose flour
  • 3/4 cups whole wheat pastry flour
  • 1/4 cup cornstarch
  • 1/2 cup canola oil
  • 1 cup vegan cane sugar (3/4 cup for cookies, reserve 1/4 cup for cinnamon sugar topping)
  • 1 1/2 cup cold water or non dairy milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons ground cinnamon

Instructions:

  1. Heat oven to 350 degrees F. Line sheet tray with parchment paper
