Colorful, Crunchy Apple and Chicken Salad With Fresh Mint and Basil

Ingredients: 1 teaspoon black pepper,1/2 cup thinly sliced fresh basil,1/2 cup thinly sliced fresh basil,2 tablespoons thinly sliced fresh mint,2 Granny Smith apples (peeled, if desired), diced (I used red apples),4 teaspoons kosher salt,2 tablespoons light brown sugar,2 tablespoons light brown sugar,1/4 cup fresh lime juice (from 2 to 3 limes),1 tablespoon white wine or rice vinegar,cup roasted peanuts, roughly chopped (I used almonds),4 scallions (white and light green parts), thinly sliced,4 boneless, skinless chicken breasts
Instructions:

  2. Put the chicken in a large saucepan and add enough water to cover by 1/2 inch.
  3. Add 3 teaspoons of the salt and 1/2 teaspoon of the pepper gently simmer. Cook 10 minutes, and then put the chicken to a bowl of ice water for 5 minutes.
  4. Combine lime juice, vinegar, and sugar, stirring until the sugar dissolves. Toss with scallions and apples.Dice the chicken and add it to the apple mixture along with the peanuts, mint, basil, and the remaining salt and pepper.
