Zucchini Salad With Black Pepper Peanuts

Ingredients: 3 Cherry tomatoes, diced,Green pepper, diced,1 tablespoon Honey,3 teaspoons olive oil,3 tablespoons Black pepper peanuts,3 tablespoons Red wine vinegar,salt and pepper,3 Sundried tomatoes, diced,Yellow pepper, diced,2 cups Zucchini, unskinned and cubed
Instructions:

  1. In a large bowl, toss together the first six ingredients. In a jar with a tight-fitting lid, combine the salad dressing ingredients and shake well.
  2. Pour over salad and toss to coat.
  3. Layer a serving bowl with some salad leaves, and add in the tossed mixture. Cover and chill for 1 hour before serving.
