Vegan Queso Dip with Chips

Ingredients:

  • 1 ¼ Cup cashews, soaked in water for 1 hour and drained
  • 2 Cups unsweetened almond milk, plus more if needed
  • 1 Teaspoon vegan margarine
  • ½ white onion, finely diced
  • 3 cloves garlic, roasted and mashed
  • 1 jalapeno chile, seeded and finely diced
  • ¼ Cup nutritional yeast flakes
  • 3 Tablespoons fresh lime juice
  • ½ Teaspoon sea salt, plus more to taste
  • ½ Teaspoon ground black pepper
  • ½ Teaspoon ground cumin
  • 1 15-ounce can organic black beans, rinsed and drained
  • 1 organic tomato, seeded and diced
  • ½ Cup shredded vegan Mexican-style cheese
  • 1 small bag organic corn tortilla chips
